MEXICAN FUDGE 
1 pkg. shredded sharp cheddar cheese (2 cups)
1 pkg. shredded monterey jack cheese (2 cups)
1 can enchilada sauce ( hot or mild)
2 eggs, slightly beaten
Salsa (jar or homemade)
Tortilla Chips

Place all ingredients in a 13" Pyrex glass casserole dish. Stir to blend with a fork. Pat down in dish to even out.

Bake in a 350°F oven for 45-55 minutes. Take out of oven and let rest until firm. When firm scoop out with a fork or spoon onto a tortilla chip with salsa on top.
