SUMMER SQUASH CASSEROLE 
4 slices bacon
4 sm. summer squash, cut into cubes
1/3 c. chopped onion
1/4 c. chopped green pepper
1 sm. tomato, chopped
2 c. herb seasoned stuffing mix
1 egg, beaten
1/2 tsp. salt
1/4 tsp. black pepper
1/2 c. shredded cheddar cheese

Place bacon in 2 quart glass casserole dish. Cover, microwave 4 to 6 minutes. Remove bacon crumble set aside. Add squash, onion, and green pepper to the bacon drippings. Cover and microwave 12 to 14 minutes or until tender. Drain and reserve liquid. Combine tomato and stuffing, egg, spices, and hot liquids. Layer over top of squash, green pepper, and onion. Cover microwave another 8 to 10 minutes. Give dish 1/2 turn during cooking time. Top with crumbled bacon and cheese. Microwave another 30 seconds to 1 minute until cheese softens. Let stand 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
