FRIED RICE 
1 c. regular rice
1 med. onion, chopped fine
1/4 lb. butter
2 (10 1/2 oz.) cans beef consomme, undiluted
1/2 c. thin sliced celery
1/2 c. thin sliced carrots
1/2 c. fresh parsley or 1 tbsp. dried parsley
1 sm. can mushrooms

Put rice, onion and butter in ungreased casserole and add the consomme. Bake at 350 degrees for 45 minutes. Last 15 minutes, add celery, carrots, parsley and mushrooms.
