HOT CALIFORNIA CHICKEN SALAD 
3 c. chicken breast, diced
1/2 c. chicken broth
2 c. celery, diced
1 pimento in strips
1 c. almonds
1 tbsp. lemon juice
1 tbsp. onion juice or chopped onion
1 1/2 c. mayonnaise
1 tsp. black pepper
1 c. crushed potato chips
1/2 c. grated mild Cheddar cheese

Heat chicken in broth over low heat until hot. Add celery, pimento, almonds, mayonnaise, lemon juice, onion and pepper. Put in dish. Top with crushed chips and cheese. Bake at 450 degrees for 15 minutes.
