APPLE CAKE 
2 c. sugar
2 eggs
1 1/2 c. oil
3 c. plain flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
3 c. raw apples, peeled & diced
1 c. pecans
3/4 c. red candied cherries, chopped
2 tsp. vanilla

Cream sugar and eggs. Add cooking oil slowly and beat well. Combine dry ingredients and stir in well. Add apples, pecans, cherries and vanilla. Mix well. Pour into greased tube pan. Bake at 325 degrees for 45 minutes to 1 hour.

FROSTING:

1 box confectioners' sugar
1 stick butter
2 sm. pkg. cream cheese
1 tbsp. water
1 tsp. vanilla
1/2 c. pecans
