APPLE - RICE PUDDING | |
3 sm. apples, peeled, cored & diced 1 1/2 c. cooked rice 1 c. skim milk 8 dates, finely sliced 1 tsp. vanilla 1 tbsp. sugar substitute 1/2 tsp. salt 1/4 tsp. nutmeg 1 tbsp. vegetable oil 3 eggs, separated Preheat oven to 325 degrees. In a large bowl stir together all ingredients except egg whites. Beat egg whites until stiff. Fold into apple-rice mixture. Turn into a 1 1/2 quart casserole. Set casserole in a large baking pan to a depth of 1 inch. Bake for 70 minutes. Serve warm or chilled. |
