IT'S A SNAP CHEESECAKE 
1 env. Knox unflavored gelatin
1/2 c. sugar
1 c. boiling water
2 pkgs. (8 oz. each) cream cheese, softened
1 tsp. vanilla extract
9 inch graham cracker crust

In a large bowl mix gelatin with sugar, add boiling water. Stir until completely dissolved with electric mixer. Beat in cream cheese, add vanilla until smooth. Pour into crust.

Chill until firm (about 3 hours). Add fresh fruit, if desired.

Makes 8 servings.
