BEEF AND BROCCOLI 
1 lb. top of round or flank steak
1/4 c. light soy sauce
1 tbsp. cornstarch
1-2 tbsp. dry sherry or dry white wine (optional)
1 tsp. sugar
1/2 to 3/4 bunch broccoli
5 tbsp. vegetable oil
Salt to taste (optional)
1 slice fresh ginger root or about 1/4 tsp. ground ginger

Cut steak into 1/4 inch slices about 2 inches long. Mix first 5 ingredients and set aside. Cut broccoli into flowerets about 2 inches long, peel stalk, and slice into 2-inch lengths less than 1/2 inch thick. Put 2 tablespoons oil din hot skillet. Stir fry broccoli, turning constantly until broccoli is dark green, about 2 minutes. Do not over cook! Remove from skillet.

Add remaining oil in skillet and add ginger and beef mixture. (If using ground ginger, mix it in with first ingredients.) Stir fry, turning constantly until meat is cooked. Add broccoli and mix well. Serve at once with white rice or your favorite fried rice.

NOTE: You can add bamboo shoots, water chestnuts, mushrooms, garlic, or whatever else you'd like to try.
