BEEF AND BROCCOLI 
3 lb. stew meat or chuck roast, cut in strips
3 - 4 lg. onions
4 celery stalks
2 c. bean sprouts
1 - 2 lg. pkg. fresh broccoli, cut stems approximately midway
1/2 c. flour
1/2 c. light oil
1 med. size bottle soy sauce
1 qt. boiling water

Brown onions and meat in oil, add flour, stir on medium heat until flour is mixed well and slowly add boiling water, stirring constantly. Add soy sauce, lower to a simmer and cover for 1/2 hour, stirring occasionally. Add chunks of celery, bean sprouts and broccoli; cook for 15 to 20 minutes until broccoli is tender. Serve over n oodles, white rice or pork fried rice. Shrimp or chicken may be substituted for the beef or you may use two or three together.
