BANANA NUT CAKE 
2 c. flour
3/4 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 1/3 c. sugar
1/2 c. shortening, softened
1/2 c. buttermilk
1 tsp. vanilla
1 c. mashed bananas
1/2 c. chopped nuts
2 eggs, beaten

Sift dry ingredients into shortening. Add 1/4 cup milk, the bananas, and mix until all flour is dampened. Then beat 2 minutes. Add eggs, nuts, and rest of milk. Beat 1 minute longer, low speed on electric mixer. Scrape bowl often.

Turn batter into prepared pan. Bake at 375 degrees for 25-30 minutes.
