BANANA-BLUEBERRY-NUT CAKE | |
3 c. flour 2 1/2 c. sugar 1 tsp. baking soda 1/4 tsp. salt 3 eggs, beaten 1 c. oil 1/2 c. butter or sour milk 1 1/2 tsp. vanilla 2 c. mashed banana 1 c. chopped pecans 1 c. blueberries, drained Combine first 4 ingredients in a large mixing bowl. Combine eggs, oil, and buttermilk. Add to dry ingredients, stirring until dry ingredients are moistened. DO NOT BEAT. Add vanilla, banana and pecans. Stir well. Gently stir in blueberries. Spoon batter into a greased and floured 10-inch tube pan. Bake at 350 degrees for 1 hour and 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove cake and cool completely. |
