CHERRY NUT CAKE 
1 1/2 c. pecans
1 1/2 c. walnuts
8 oz. maraschino cherries, drained
1/2 lb. pitted dates
3/4 c. flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 tsp. vanilla

Put fruit and nuts in large bowl. Sift flour, sugar, baking powder and salt together and add to fruit and nuts. Beat eggs until foamy, add vanilla and stir into other mixture. Pour into 2 well greased pans, approximately 7 3/8" x 3 5/8" x 2 1/4". Pack evenly in pans. Bake at 300 degrees for approximately 1 hour.

(NOTE: I usually double recipe to make 4 cakes to share with friends and relatives at Christmas time.)
