ITALIAN ARTICHOKE SAUTE 
6 med. artichokes
Boiling salted water
1 tbsp. lemon juice
1 tsp. salt
Fresh ground pepper
1 tsp. oregano leaves
2 cloves garlic, finely chopped
1/4 c. olive oil

Wash artichokes and remove 2-3 layers of outer leaves. Trim off 2/3 from top of artichoke and cut artichoke in half. Cook artichokes, covered, in 2-3 inches boiling salted water with lemon juice until tender, about 20-30 minutes. Drain, remove chokes. In large skillet, saute artichokes and remaining ingredients in hot oil until lightly browned. Makes 6 servings.
