PIZZA 
2 pkgs. dry yeast
Pinch of sugar
1 1/4 c. lukewarm water
3 1/2 c. all-purpose flour
1 tsp. salt
3/4 c. olive oil
2 c. pizza sauce
1 lb. Mozzarella cheese, grated
1/2 c. grated Parmesan cheese

Sprinkle the yeast and a pinch of sugar into 1/4 cup of lukewarm water. Be sure water is lukewarm (110-115 degrees). Let stand for 2 or 3 minutes, then stir the yeast and sugar into water until completely dissolved. Set the cup in a warm place for 3 to 5 minutes or until the yeast bubbles up and the mixture almost doubles in volume.

Into a large bowl, sift the flour and salt. Make a well in the center of flour and pour into it the yeast mixture, 1 cup of lukewarm water and 1/4 cup of the olive oil. Mix the dough with a fork. When you can gather it into a rough ball, place the dough on a floured board and knead it for about 15 minutes or until smooth, shiny and elastic. Dust the dough lightly with flour; place it into a large bowl; cover with a plate. Set the bowl in warm place and let rise for 1 1/2 hours.

Preheat oven to 500 degrees. Punch dough down. Break off enough to make 2-4 pizzas. Dust pizza pans lightly with cornmeal and place rolled out pizza dough on it. Use the pizza sauce and your favorite toppings on them. Dribble 2 tablespoons olive oil over pizza and bake on bottom shelf of oven for 10 minutes or until crust is lightly browned.
