LEMON SHORTBREAD BARS | |
1 c. flour 1/2 c. butter 1/4 c. powdered sugar Blend ingredients and pat into an 8x8 pan. Bake at 350 degrees for 20 minutes. (Bake at 325 degrees if using a glass pan.) While this is baking, mix together: 1 c. sugar 2 tbsp. flour 1/2 tsp. baking powder 4 tbsp. lemon juice Grated rind of 1 lemon Pour over the partially baked crust and bake for an additional 25 minutes. Cool completely before cutting into squares. Sprinkle with powdered sugar. This recipe can be doubled for a 9x13 pan. |
