CATFISH COURTBOUILLON 
2 to 3 lb. catfish
Cooking oil
1 can tomato sauce
1 can water
Onion tops, chopped
Parsley, chopped
Onions, chopped
Flour
Salt and pepper to taste

Put catfish in heavy pot with just enough oil to cover bottom of pot. Add tomato sauce, water, onion tops, parsley and onions. Mix well. Add 1 tablespoon flour and seasonings. Cook until the sauce begins to boil. Reduce to low heat and put lid on. Cook until fish is done.

OTE: NEVER stir the mixture. You may shake the pot.
