CATFISH SALAD 
2 catfish fillets, cut in 1 inch cubes
1 yellow Bell pepper, cut into strips and roasted
1 sm. red onion, sliced
1 tbsp. fresh dill, chopped
1/4 c. virgin olive oil
1/4 Balsamic vinegar
1 head Boston lettuce, torn
2 c. Romaine, torn
6 slices lean bacon, cooked & crumbled
3 oz. Blue cheese, crumbled
1 tsp. J.D.'s Vegetable Magic
1/2 tsp. Cajun seasoning

Place catfish fillets in skillet, add water to cover. Bring to a boil over medium-high heat and reduce heat to low. Simmer, uncovered for 5 to 7 minutes or until fish begins to flake. Drain. Combine catfish, yellow pepper, red onion, dill, oil and vinegar in large bowl. Cover and marinate for one hour or more in refrigerator. Just before serving, add lettuce, bacon, cheese, Vegetable Magic and Cajun seasoning. Toss to mix well and serve. Season with salt and pepper if necessary.
