BUTTERMILK COCONUT PIE 
1 1/4 c. sugar
1/2 c. butter, melted
1/2 c. cultured buttermilk
1 unbaked 9-inch pie shell
2 tbsp. all-purpose flour
3 eggs, beaten
1 tsp. vanilla
1 (3 1/2 oz.) can flaked coconut, divide

Combine the sugar and flour in a large bowl. Add melted butter, eggs, buttermilk, vanilla, and two-thirds of the coconut. Mix well. Pour mixture into shell. Sprinkle with remaining coconut. Bake at 325 degrees for one hour and five minutes or until set.
