ENCHILADAS CASSEROLE 
2 cans cream of mushroom soup
1 soup can full of water
1 sm. pkg. corn tortillas
1 1/2 c. grated cheddar cheese
1 can Rotel tomatoes
1 pkg. taco seasoning
1 sm. onion, chopped
1 lb. ground beef

Mix soup, water, Rotel, taco seasoning and 1/2 cup of cheese in a bowl. Fry onions with ground meat. Put a layer of tortillas in bottom of casserole dish; top with a layer of meat, then a layer of sauce mixture. Repeat until all ingredients are used up. Top with remaining cup of cheese; bake one hour at 350 degrees.
