BRUNCH BAKE 
12 oz. pkg. maple sausages
2 tart apples
2 tbsp. butter
3 - 4 tbsp. light brown sugar
1 egg
2/3 tsp. sugar
1/3 c. melted butter
2 tbsp. sausage drippings
1/3 c. cornmeal
1 1/2 c. flour
2 tbsp. baking powder
Pinch of salt
2/3 c. milk

Melt 2 tablespoons butter in 9 inch square pan. Sprinkle brown sugar evenly over bottom of pan. Brown sausages in skillet. Peel and core apples and cut into 1/2 inch slices. When sausages are nearly done, push to side of pan and saute apples lightly on both sides (1 to 2 minutes). Arrange sausages and apples over brown sugar mix. Beat egg. Add sugar, butter and drippings. Sift cornmeal, flour, baking powder and salt together and add alternately with milk. Spread over sausages. Bake at 400 degrees for 30 to 35 minutes.
