BRUNCH BREAD | |
1/2 c. sugar 1/2 c. vegetable oil 1 c. pumpkin puree 2 eggs 1 1/2 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt 1/2 c. raisins 1/2 c. chopped walnuts Heat oven to 350 degrees. In a large bowl, beat together sugar, oil, pumpkin, and eggs. In a medium bowl combine remaining ingredients. Fold dry ingredients into pumpkin mixture. Stir just enough to moisten. Pour batter into 9 x 5 x 3 inch greased loaf pan. Bake for 50-60 minutes or until a cake tester comes out clean. Set pan on a rack to cool for 10 minutes, then turn out to cool completely. |
