MY FAVORITE APPLES
6 med. sized (2 1/2 - 3 inch diameter) red Gravenstein or tart green apples
1/4 c. (about 3 oz.) marzipan or candies of choice
butter
1/3 c. whipping cream
Grated nutmeg

In the autumn, when all campers have left Wolahi and the apples are ripe in Julian, I sneak into my favorite orchard and collect 6 fallen apples. Then I sneak into the Boy Scout camp and bake them as follows on a barbecue or wrapped in foil in the coals.

Core apples. Fill cavities with marzipan or other candy. Set apples in a buttered 8-9 inch square or round pan. Pour cream over apples, then sprinkle nutmeg lightly over all.

In a barbecue with a lid, set pan in the center of grill over coals. Cover barbecue, open vents, and bake until fruit is tender when pierced, about 50-60 minutes. After 20 minutes, baste fruit occasionally with cream.

Or wrap each apple in foil and bake in coals for 30 minutes. Let them cool or you'll burn your little fingers, then pour cream over and enjoy.
