KENTUCKY FRIED CHICKEN 
3 lbs. chicken, cut in sm. pieces
2 pkgs. Italian salad dressing mix
3 tbsp. flour
2 tsp. salt
1/4 c. lemon juice
2 tbsp. butter, melted

Roll chicken in mixture; coat well and place in covered bowl overnight or at least 8 hours. This marinates your chicken.

8 oz. cooking oil
1 c. milk
1/2 c. pancake mix
1 tsp. paprika
1/2 tsp. sage
1/4 tsp. black pepper

Use 2 skillets and put half of oil in each. Mix pancake mix with paprika, sage and black pepper. Dip chicken in milk, then roll in pancake flour mixture; shake off excess and brown in skillets on both sides. Place on shallow baking pan, cover with foil and bake 1 hour at 350 degrees. Remove foil and bake 10 minutes at 400 degrees for crispy chicken. Serve hot.
