ZUCCHINI CAKE 
3 c. sugar
1 1/2 c. cooking oil
4 eggs
3 c. peeled and grated zucchini squash
3 c. all-purpose flour
2 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts

Preheat oven to 300 degrees. Combine sugar, oil, eggs and zucchini. Mix well. Sift together remaining ingredients except nuts, then add nuts. Combine both mixtures, mixing well and pour into a greased and floured bundt pan. Bake for approximately 1 to 1 1/2 hours or until done.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla
1 box powdered sugar

Cream together the cream cheese, butter and vanilla. Gradually add in powdered sugar, mixing well after each addition. Spread frosting on cooled cake. Servings are determined by the thickness of the slices.
