TYROLESE APPLE RING | |
3 1/3 c. all-purpose flour 1 pkg. instant dry yeast 1/2 c. sugar 1 pkg. vanilla sugar Pinch of salt 1 egg 1/2 c. butter, melted 1 c. lukewarm milk, approx. FILLING: 1 1/4 c. cream cheese or Quark, softened 1/4 c. sugar 5 drops lemon flavoring concentrate 1 egg 1 1/2 lb. apples 1/2 c. sugar 1 egg yolk, slightly beaten 1/2 c. pine nuts or slivered almonds Dough: Preheat oven to 400 degrees. Grease and flour baking sheet. Combine flour and yeast in large bowl. Make a well in center. Put sugar, vanilla sugar, salt, egg and melted butter in well. Work flour into center ingredients, gradually adding milk. Knead dough with dough hooks or by hand until blistered and shiny in appearance and no longer sticky, about 5 minutes. Place in greased bowl. Let rise, covered, in warm place until doubled in size, about 1 hour. Knead again. Roll out dough to a 1/4 inch thick rectangle. Filling: Combine cheese, sugar, flavoring concentrate and egg. Beat until smooth. Spread filling evenly over dough. Peel and core apples, cut into small pieces. Distribute evenly over filling. Sprinkle with sugar. Roll up dough tightly, starting at long side. Shape roll into a ring on prepared baking sheet. Press ends together to seal. Make incisions at regular intervals on top of dough ring. Brush with beaten egg yolk. Sprinkle with pine nuts. Bake on middle oven rack at 400 degrees for 30-40 minutes. Serve warm or cool. |
