TUNA OR SALMON BAKE 
2 tbsp. butter
1/4 c. chopped green pepper
1 tbsp. flour
1 tsp. salt
Dash of pepper
1/2 c. milk
1 egg, slightly beaten
1/4 c. sour cream
1/2 c. mayonnaise
16 oz. can Chop Suey vegetables, rinsed and drained
1 (6 1/2 oz.) can tuna or salmon
2 tomatoes, cut in wedges
2 tbsp. butter
1/2 c. crushed chow mein noodles

Melt 2 tablespoons butter in saucepan; add green pepper and cook 2 minutes. Blend in flour, salt, and pepper. Gradually add milk; cook, stirring until slightly thickened.

Blend together egg, sour cream, and mayonnaise; stir into sauce. Add vegetables and tuna or salmon.

Turn into greased 1 quart baking dish. Arrange tomato wedges on top. Bake at 375 degrees for 25 minutes.

Melt 2 tablespoons butter in skillet and add chow mein noodles and heat until slightly browned. Sprinkle over top of casserole.
