ALMOND CAKE 
1 c. butter
3/4 c. sugar
1 egg
1/2 c. almond paste
1 tsp. almond extract
2 c. sifted flour
1/4 c. sliced almonds

Preheat oven to 350 degrees. In large bowl with electric mixer at medium speed beat butter and sugar until fluffy. Separate egg, set white aside.

Beat yolk into butter mixtures. Beat in almond paste and almond extract until smooth at low speed. Beat in flour until well combined.

Press into ungreased 8 x 8 x 2 inch pan. Beat egg white until frothy, brush over top of dough. Cover with sliced almonds. Bake 30 minutes or until golden brown. Cool completely on a wire rack. Cut into 1 1/2 inch squares. Makes 20.

I liked the simplicity of this recipe and it was super easy to assemble. I cut back sugar to 1/2 cup and result was a slightly sweet bar that would go great with coffee. I will make this again.
