STUFFED CHICKEN BREAST ELEGANTI 
6 breast of chicken boned and flattened
6 slices bread, crust removed and cubed
1 (2 oz.) can drained mushroom pieces
2 tbsp. minced onion
2 tbsp. minced celery
1/2 tsp. poultry seasoning
1/2 tsp. pepper
1/4 c. butter, melted
1 can mushroom soup
1 c. sour cream

Combine bread, mushrooms, onion, celery, seasonings and butter. Place a mound of dressing on each chicken breast. Fold chicken and skin around the dressing and skewer. Dip each chicken breast in flour and beaten egg and again in flour. Brown in 1/2 cup of butter. Turn heat down, cover pan and cook for 45 minutes. Remove chicken breasts to a hot platter. Blend a can of mushroom soup and cup of sour cream into the drippings to make a delicious sauce. When heated serve immediately. Serves 6.
