STUFFED MANICOTTI CREPES 
CREPE BATTER:

3 c. flour
3 eggs
1 1/2 c. milk
1 1/2 c. water
Dash of salt

STUFFING:

2 lbs. ricotta cheese
2 eggs
Chopped fresh parsley
Parmesan cheese

Mix all crepe ingredients together and fry, 3 tablespoons at a time in a crepe pan. Layer between pieces of waxed paper and set aside.

Mix all stuffing ingredients together. Lay out a crepe and put a good sized spoonful of cheese mixture on one side, fold over bottom edge, then each side edge then roll up. Place, seam side down in baking pan. Top with spaghetti sauce and bake at 350 degrees about 45 minutes.
