STUFFED STEAK 
1 egg
3/4 c. seasoned bread crumbs
boiling water
2 onions, diced very fine
Sm. handful Old Fashioned Quaker Oats
salt and pepper, to taste
olive oil
1 potato, grated
paprika
garlic powder
Flank steak
Potatoes for baking

Wash flank steak and pat dry.

Sprinkle one side lightly with garlic powder. On the other side, score the meat.

Dice the onion and sauté in a tablespoon of olive oil. When the onion takes on a little color, add 3/4 cup of bread crumbs and handful of oats. Stir in egg.

Grate the potato and add sautéed onion and seasoning. If mixture is dry, add a few drops of boiling water, just enough to moisten.

Put the stuffing in the middle of steak and sew the 2 long ends together or tie up with string.

Place steak in a baking dish or pan which has been sprayed with non-stick spray or lined with aluminum foil for easy clean-up. Sprinkle with the second onion, and place potatoes for baking alongside. Add water enough to cover potatoes partway. Season with salt and paprika.

Bake at 350°F for 1 to 1 1/2 hours. Remove from oven and allow to cool for 15 minutes before slicing. Return to oven until done, about 1/2 hour to 45 minutes.
