“VEGETARIAN BORSCH” IS IN:

VEGETARIAN BORSCH 
6 beets, boiled and chopped (I recommend organic)
2 cucumbers, peeled, seeded and chopped
3 cups dairy sour cream, divided
1/2 small onion, minced
1 tbsp. cider vinegar
1 lemon, juiced
1 tsp. pepper
sea salt, to taste
chopped chives (for garnish)

Place beets, cucumbers, half the dairy sour cream, onion, vinegar, lemon juice and pepper in blender and blend well. Taste and adjust seasonings.

Serve in bowls with remaining dairy sour cream and garnish with chopped chives.
