POTATOES ASSISI 
4 lg.potatoes, sliced
4 tbsp. olive oil
1 tbsp. water
1 tbsp. dried basil
4-6 garlic cloves, pressed
1/2 c. grated Parmesan cheese

Cover the bottom of large roasting pan with oil, water, basil and garlic. Add sliced potatoes and toss through the oil mixture. Distribute potatoes evenly through the pan. Roast at 400 degrees. Check frequently and toss potatoes with spatula as they brown. They will tend to stick to the pan. When browned to your taste, sprinkle the Parmesan cheese over the potatoes. Return to oven for a few minutes before serving. Serves 4.
