ARTICHOKE SALAD 
1 box Rice-A-Roni chicken mix
4-5 green scallions, diced
1/2 green bell pepper, diced
2 stalks celery, diced
3-4 tbsp. mayonnaise
2 cans marinated artichoke hearts, diced (reserve juice)
1/2 yellow or red bell pepper, diced

Cook Rice-A-Roni according to package directions. Cool. Add vegetables; toss. Add mayonnaise. Mix well. Add artichoke hearts, diced. Mix and chill. Add juice and toss before serving.
