RICE-ARTICHOKE SALAD 
1 (6 oz.) box chicken flavored rice
4 green onions, finely chopped
1/2 green pepper, chopped
12 pimento stuffed olives, chopped
1 (6 oz.) water chestnuts, thinly sliced
1 (6 oz.) jar marinated artichokes, chopped
1/2 c. mayonnaise
3/4 tsp. curry powder
Liquid from artichoke or water chestnuts

Cook rice according to directions given on package using a less amount of water and omitting butter (cool). Add onions, peppers, olives, water chestnuts, and artichokes. Mix water chestnuts or artichokes liquid with mayonnaise and curry powder. Toss salad lightly. Chill overnight.
