LEMON BARS | |
CRUST: 2 c. flour 1/2 c. powdered sugar 1 c. butter, softened FILLING: 4 eggs, slightly beaten 2 c. sugar 1/4 c. flour 1 tsp. baking powder 1/4 c. lemon juice GLAZE: 1 c. powdered sugar 2 to 3 tbsp. lemon juice Heat oven to 350 degrees. Lightly spoon flour into measuring cup; level off. In large bowl, combine 2 cups flour, 1/2 cup powdered sugar and butter at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9 inch pan. Bake at 350 degrees for 20 to 30 minutes or until light golden brown. In a large bowl, combine eggs, sugar, 1/4 cup flour and baking powder; blend well. Stir in lemon juice. Pour mixture over warm crust. Return to oven and bake 25 to 30 minutes or until top is light golden brown. Cool completely. In small bowl, combine powdered sugar and enough lemon juice for desired glaze consistency; blend until smooth. Drizzle over cooled bars. Makes 36 bars. Note: For more lemony flavor, add grated lemon rind to the lemon juice. |
