CHEESE CAKE CUPCAKE 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla

Beat cream cheese until softened and fluffy. Add sugar, eggs, lemon juice, and vanilla. Beat together until light and fluffy. Line muffin tin with papers. Place vanilla wafers in bottom of each paper. Fill cup 2/3 full with filling. Bake at 375 degrees for 17 minutes or until filling is set. Top with your favorite pie filling and chill for at least 1 hour.
