HOT CHICKEN SPREAD 
2 c. cooked, cubed chicken
1 c. chopped celery
3/4 c. mayonnaise
1/3 c. chopped green pepper
2 tbsp. chopped onion
2 tbsp. chopped pimiento
2 tbsp. lemon juice
1/2 tsp. salt
3/4 c. cubed cheddar cheese
1/2 c. crushed potato chips

Combine all ingredients except cheese and potato chips in a 1 quart casserole. Microwave on high 4 to 5 minutes or until heated. Stir in cheese. Top with chips. Cook on high 1 to 2 minutes or until cheese softens. Serve with crackers.

Since microwave ovens vary in power, you may need to adjust your cooking time.
