BUTTERED BEETS 
6 beets
4 tbsp. brown sugar
1/2 tsp. salt
2 tsp. cornstarch
1/4 c. vinegar
1/2 c. cold water
2 tbsp. butter

Wash, peel and slice beets. Steam until tender in 1/2 cup water. Combine sugar, salt and cornstarch. Add vinegar and water and cook until clear on low heat. Stir in butter and pour over beets. Keep warm on very low heat for 20 minutes to let the flavor penetrate the beets.
