PUFFED CHEESE OMELET 
3 tbsp. butter
3 tbsp. all-purpose flour
1/8 to 1/4 tsp. salt
3/4 c. milk
1/3 c. (1.3 oz.) shredded extra sharp Cheddar cheese
3 eggs, separated

Melt butter in a heavy saucepan over low heat; add flour and salt, stirring until smooth. Cook 1 minute, stirring constantly.

Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add cheese, stirring until melted; remove from heat, and cool slightly.

Beat egg yolks until thick and lemon colored. Gradually stir about 1/4 of hot mixture into yolks; add to remaining hot mixture, stirring constantly. Beat egg whites, at room temperature, until stiff but not dry; fold into cheese mixture. Spoon into two 3-cup baking dishes. Bake at 350 degrees for 20 minutes or until puffed and golden brown. Yield: 2 servings.
