SQUASH CASSEROLE 
butter
bread crumbs (I use cornbread)
2 c. mashed squash
1 c. sour cream
1 c. grated carrots
1 can cream of mushroom or cream of chicken soup
1 chopped onion
salt and pepper to taste

Butter a 1 1/2-quart casserole dish and sprinkle a layer of bread crumbs on bottom. Combine rest of ingredients and place on top of bread crumbs. Top with bits of butter and cover with bread crumbs.

Bake at 350°F for 30 minutes.
