THREE CHEESE MANICOTTI 
1 pkg. (1 1/2 oz.) spaghetti sauce mix
1 1/2 c. water
1 can (8 oz.) tomato sauce
2 c. shredded mozzarella cheese
1 c. ricotta or cottage cheese
1/2 c. grated Parmesan cheese
8 manicotti shells, cooked and drained
2 eggs, beaten
1/4 c. chopped parsley
1/8 tsp. pepper

In a saucepan, blend water and tomato sauce; add dry spaghetti sauce mix. Simmer 30 minutes uncovered.

Combine 1 cup mozzarella with ricotta and Parmesan cheese; add eggs, parsley, salt and pepper, mixing lightly.

Stuff manicotti shells with cheese mixture and place in a greased 2 quart casserole. Pour sauce over the top.

Cover with remaining mozzarella. Bake in a 350 degree oven for 30 minutes. Serves 4.
