TRIPLE CHEESE MANICOTTI | |
1 1/2 c. water 1 (8 oz.) can tomato sauce 1 pkg. spaghetti sauce mix 2 c. shredded Mozzarella cheese, divided 1 c. Ricotta cheese 1/2 c. grated Parmesan cheese 2 eggs, beaten 1/2 tsp. salt 1/8 tsp. pepper 8 manicotti shells, cooked & drained Combine water, tomato sauce and spaghetti sauce mix in a small saucepan. Simmer, uncovered 10 minutes. Mix 1 cup Mozzarella, Ricotta, Parmesan, eggs, salt and pepper. Stuff cheese mixture into cooked shells using about 1/4 cup for each shell. Pour 1/2 cup sauce into shallow 2 quart casserole; arrange manicotti shells in sauce and pour remaining sauce over top. Sprinkle with remaining Mozzarella cheese. Bake, uncovered at 350 degrees for 25 to 30 minutes or until bubbly. Yield: 4 servings. |
