CHEESE MANICOTTI 
2 c. shredded mozzarella
2 c. ricotta cheese
2 eggs, slightly beaten
1 tbsp. minced parsley
1/2 c. Parmesan cheese
1/2 tsp. nutmeg
1/2 tsp. basil
1/2 tsp. salt
1/2 tsp. pepper
32 oz. jar Prego spaghetti sauce
3/4 c. water
1 pkg. manicotti

Heat sauce with 3/4 cup water. Cover bottom of 9 x 13 inch baking dish with 1 cup sauce. Mix filling ingredients and stuff uncooked manicotti. Arrange in single layer over sauce. Leave space between each manicotti for expansion. manicotti will absorb the water from the sauce as it bakes and will become tender. Cover manicotti with remaining sauce and cover pan with tin foil. Bake at 375 degrees for 1 hour.
