JEWISH APPLE CAKE 
5 (average) apples, peeled & sliced thin
5 tbsp. sugar
2 tsp. cinnamon
4 eggs
2 c. sugar
2 1/2 tsp. vanilla
3 tsp. baking powder
1 c. oil
3 c. flour
1 tsp. salt

Cover apples with sugar and cinnamon; set aside. Beat eggs, sugar, then add vanilla, baking powder, oil, flour and salt. Pour into greased tube pan. Alternate 1/2 batter with 1/2 apples, ending with apples. Bake at 350 degrees for 1 1/2 hours. Cool on side for 15 minutes. Stays moist for a long time.
