CHICKEN SCALLOPINI 
1 lb. (or more) chicken breasts, deboned
Egg, beaten (amount varies)
Seasoned bread crumbs, Italian flavor
Butter & Pam spray to fry in
Lemon wedges

Flatten chicken quite thin; dip in egg, then crumbs. Fry until golden. Squeeze lemon on as frying. Serve more lemon wedges at table.
