ASPASIA'S KEFTETHES 
1 lb. lean ground beef
2 eggs, slightly beaten
4 slices white bread, crusts removed, soaked in milk
2 tbsp. mint leaves (dried and crushed)
2 tbsp. Italian seasoning
1-2 garlic cloves, minced
Med. size onion, chopped fine
2 tbsp. chopped parsley
1-2 tbsp. Parmesan cheese
Salt and pepper to taste
Flour
Lemon juice
Olive oil (or vegetable)

Mix all ingredients (except flour, lemon juice, and oil) together by hand. Make into egg-sized meat balls. Roll lightly in flour. Fry in hot olive oil until nicely browned (a few at a time). Moisten with lemon juice. Serve with salad and vegetables.

NOTE: These can be served as hors d'oeuvres. Make meat balls small and stick with toothpick.
