QUICK AND EASY JELLO SALAD 
1 (16 oz.) can crushed pineapple
1 (11 oz.) can mandarin oranges
1 (12 oz.) sm. curd cottage cheese
1 (3 oz.) pkg. of jello (strawberry, lime or wild cherry work well)
1 (8 oz.) container of Cool Whip, thawed

Drain well the pineapple and mandarin oranges. Mix together the pineapple, oranges, cottage cheese, and jello (do NOT dilute jello, mix in the dry grandular package). Fold in the Cool Whip.

Chill in the refrigerator for a couple of hours or overnight. You may dress up the recipe by adding crushed walnuts, mini marshmallows, and/or cherries.
