PEANUT SOUP 
4 tbsp. butter
1/2 c. diced celery
1 sm. onion, chopped
1 1/2 tbsp. flour
1 3/4 c. chicken broth
1/2 c. creamy peanut butter
1/2 c. light cream
Garnish: parsley & peanuts

Melt butter and saute celery and onion until transparent. Stir in flour until smooth. Add broth and bring to a boil, stirring. Add peanut butter and simmer for 20 minutes, stirring frequently. To serve: Stir in cream and heat. 8 servings.
