LEMON KISS COOKIES 
1 1/2 c. butter
3/4 c. sugar
1 tbsp. lemon extract
2 3/4 c. flour
1 1/2 c. finely chopped almonds
14 oz. candy kisses or other foil-wrapped chocolate balls

Cream until fluffy - the butter, sugar and lemon. Add flour and almond. Chill dough for 1 hour. Unwrap chocolate kisses or balls.

Form dough around chocolate (balls are easier than kisses - it's not easy but the cookies are worth it) !

Bake 8 to 12 minutes at 375 degrees.

Roll in powdered sugar before serving.
