HOE CAKES 
1 1/2 c. self-rising cornmeal
1/4 tsp. baking soda
1 1/4 c. buttermilk
1 egg, slightly beaten
1 tbsp. melted shortening
1/4 c. shortening

Combine cornmeal and baking soda in a medium bowl. Add buttermilk, egg, and 1 tablespoon melted shortening. Stir just until moistened. Heat 1/4 cup of shortening to 365 degrees in electric skillet or on medium high heat in large heavy skillet. Pour 1/4 cup of the batter into the skillet for each hoe cake. Fry 1 to 2 minutes or until golden brown on each side. Add more shortening, if necessary. Drain on paper towels. Serve immediately. Serve with fried fish.
